It only takes a few simple ingredients, olive oil, fresh herbs, and a sprinkle of cheese, to create a pasta recipe worth making again and again.⠀

  1. Preheat oven to 200°C ⠀
  2. Cook the pasta in a large saucepan of salted boiling water until al dente.
  3. Drain and set aside.⠀
  4. Heat the oil in a large saucepan over high heat. Add the speck and cook until crisp. ⠀
  5. Remove and keep aside.⠀
  6. Place the pasta, milk, mascarpone, salt, pepper and half the cheddar in the pan and return to high heat. Bring to a simmer, stirring until warm⠀
  7. Place the mixture in an ovenproof dish. Top with the speck, rosemary, pepper and remaining cheddar, and cook for 10 minutes or until golden.
  8. Sprinkle with pepper and serve.
