These Hasselback potatoes have everything you'd want from potatoes! They are crispy on the bottom and the top, soft in the middle, double brushed with a garlicky nutty Zaatar mix, sprinkled with juicy pomegranate seeds, and it wouldn't work without a little bit of lemon zest on top.   1. Place a potato between the handles of 2 wooden spoons or 2 chopsticks. Slice the potato into thin slices; the spoon handles or chopsticks will prevent you from slicing the potato all the way through. Repeat with the remaining potatoes.
  2. In a small bowl, mix oil, salt, minced garlic, and Zaatar. Arrange the potatoes in a lightly oiled oven pan and generously brush them with the prepared mix.
  3. Place the potatoes in a preheated 180°C oven for 30 Minutes. Remove them and generously brush them again with the Zaatar mix. Return to oven for around 40 Minutes. Make sure to turn the broiler on during the last 10 minutes to make their tops crispy. The cooking time depends on the size of the potatoes so keep checking on them; they should be golden brown on the outside and soft in the middle.
  4. Finish them with lemon zest, chopped Zaatar, and pomegranate seeds. Serve immediately and enjoy!
